春節假期即將來臨,對大多數人而言,要面對充滿食物誘惑的新年假期無疑是種考驗。根據以往的經驗,在長長的年假裡,胖個一、兩公斤,似乎是再平常不過的事,為了避免這樣的惡夢重覆上演,營養師特別提供春節健康飲食原則,讓民眾能過年聰明吃,不讓體重也跟著「步步高升」。

草屯療養院營養師蔣瑜表示,春節是中國人闔家團圓的大日子,豐盛的年菜是不可少的點綴之一,為了避免讓體重悄悄地上升,建議民眾要:收斂放縱胃口的心情、每天量體重、選擇低油低糖的食物、多菜少肉、控制飲食量,避免暴飲暴食。

另外,減重族在年菜的烹調方面可稍加改變,才不會在年假過後,一上磅秤被自己的重量嚇一跳。例如:

1)年年有魚/魚肉含豐富的蛋白質及不飽和脂肪酸,能預防心血管疾病,為最佳之年菜,魚的作法可將油炸或糖醋改為清蒸或紅燒。

2)雞/烤、燻、燉、煮之作法皆可,記得吃雞肉時要將外皮去掉。

3)紅燒肉/挑選肥肉較少的部位(如後腿肉)或瘦肉,勾芡淋汁勿食。也可水煮後做成蒜泥白肉,既清淡又不油膩。

4)長年菜/芥菜、菇藻、豆類蔬菜富含纖維質,但熱量不高,可多吃些。

5)水餃/元寶可改用魚片或蝦仁當餡料,不但可增加新鮮感,油脂含量也較少,而青菜的比例要多一點,最重要的是,不要沾太多佐料,尤其是香油。

6)甜點/年糕是不可少的應景食品,食用時除了避免用裹麵粉油炸的方式外,還要記得吃年糕就等於吃飯,所以飯量要相對減少。

自己的飲食自己把關,讓體內器官放個好年假。蔣瑜營養師也提醒,想要健康的過好年,只要聰明選對食物,飲食均?、足量飲水、適當運動作息正常,吃飯時細嚼慢嚥,就不用太擔心過個年又胖了一圈!
